Imagine a dish that combines the rich heritage of Norway's traditional lefse with the bold flavors of Ireland's beloved corned beef and cabbage. 

This innovative wrap features Norwegian lefse, a soft and buttery potato flatbread, paired with Irish corned beef and sautéed cabbage, all wrapped up in a flavorful bundle. The addition of a tangy mustard-mayo spread adds a creamy depth to each bite, making this dish perfect for anyone looking to explore new flavors while honoring traditional roots.

Ingredients:

  • 4 pieces of lefse
  • 1 lb corned beef, thinly sliced
  • 2 cups green cabbage, shredded
  • 1 tbsp butter
  • 1 tbsp whole grain mustard
  • ¼ cup mayonnaise
  • 1 tbsp apple cider vinegar
  • Salt and pepper to taste

Instructions:

  1. In a skillet, melt butter and sauté cabbage until tender (about 5 minutes). Add vinegar, salt, and pepper.
  2. Mix mustard and mayonnaise in a small bowl.
  3. Spread a thin layer of mustard-mayo on each lefse.
  4. Add sliced corned beef and sautéed cabbage.
  5. Roll up the lefse and serve warm.
